As for the zucchini muffins (which I have been making quite often as they are the few things my son Lucas will eat), once you've grated the zucchini, you can put it into a clean dish towel and squeeze the excess water. The temperature of your oven may be to high. Try cooking them at 325 instead of 350 for the same amount of time and once they are done open the oven door and let them sit for a bit before taking them out. Sometimes taking them out too soon while they are still hot and cooking may cause them to sink. Hang in there...it gets better and better! Prayers help very much too!
