Have you tried banana pancakes? 2 eggs, one banana. Mush banana, add egg,

use coconut oil to fry. I drizzle orange syrup (fresh orange juice reduced

with a bit of honey) or strawberry syrup (same way with strawberries). You

can also put pear sauce (or apple, peach, strawberry, etc). They are very

good.

I have no idea if the person responsible for this recipe on PecanBread

still posts here or not, but I want to send my gratitude because Mason

just pounded 3 of these! We've had the hardest time getting him to eat

anything but eggs for protein. I guess he's so desperate for carbs

that anything even remotely resembling a muffin will do!

If anyone else has any sneaky muffin recipes (no flour or nut butters

yet), i'd be forever in your debt!

Adding onto Kelli's...making squash pancakes, eggs and squash, butternut is

excellent, with a few pinches of cinnamon.
