Guest guest Posted May 21, 2006 Report Share Posted May 21, 2006 I was leafing through an old Joy of Jello cookbook of my mom's from the 60's and came across an idea I had totally forgotten about since I was a kid- whipped gelatin. I tried it with the intro gelatin made with watered down Welch's Grape Juice and it was a hit with Cody. You just take your intro gelatin and let it set up or almost set up and then beat with a mixer until it's thicker and fluffy. It will drastically lighten the color of the jello and give it an altogether different texture. I poured the resulting mixture into the little mini containers from Digestive Wellness and froze them into little mini desserts. You can also put it back in the fridge and let it reset. Another idea in the book I didn't use since I'm wary of raw eggs- add unbeaten egg whites to the thickened partially set gelatin before whipping and make " Snows " . This was nice for variation in the intro so thought I'd pass the idea along. Janet, mom to Cody- 5 yrs old- multi food allergies- SCD since 4- 17-06, restarting with intro today!
