All foods have lectins in them....EVERYTHING. There are different types. Some

LECTINS in foods are more toxic to us than others, especially when we have

damaged guts and we eat them raw.....can irritate lining of intestines...and

even cause damage. Seeds and beans are high in lectins so are foods in the

night shade family: tomato, eggplant, peppers, I can't remember all of them

all....more than likely probably because of the seeds in these foods!) It

appears to me that ELAINE TAKES THIS INTO ACCOUNT IN HER SCDIET....so don't fret

if you are at the right STAGE and eating a strict SCDdiet. Do a Google search on

the LECTINS to learn more....For some of us, not good to eat if you are already

having problems with a damaged gut.....but again if on the right stage should

not have a problem. Elaine was more interested in denaturing the

lectins...through fermentation such as cheese and yogurt, and special cooking

(soaking draining and cooking beans the SCD way) using tomato juice instead of

sauce.......to help make the food into a monosaccharide and safe for us to eat!

This also ironically makes toxic lectins denatured...and safe for us ! Thank

God for Elaine research!

After reading the BTVC book I am under the impression/ and after being on this

list for a short time/ that when the gut heals eating a strict SCD, that our

tolerance to foods gets better...and intolerance to such lectins, goes away.

ALSO REMEMBER that Elaine takes into account that cooking is very important in

the beginning of healing, and the Pecan web site take account STAGES that don't

introduce these foods until later...or when person is READY. Review the

stages.....I know in this house we " jump " to often...and pay for it!

This is why with this zucchini milk we will be taking out the seeds!....since it

is not cooked. Seeds if cooked often denature the lectins. Plus, we always

have to make sure that everything we eat is LEGAL for this SCDiet! If the raw

zucchini milk make us sick we won't do it again! So we will not be

experimenting with this one for a while. Always listening to our bodies and

keeping food dairies like Elaine told us to.

Food For Thought, Antoinette ....the QUEEN OF " JUMPING " TO FAST to stages we are

not ready for!......

(day 37 entire family SCDiet and finally healing when no other way of eating

worked.....14 months of experimentation too....and to think that this SCDiet was

around yet didn't adhere to it yet...now we are trying our best...thank God it's

about practice and not perfection!)

Antoinette, what are lectins? My son spends two days out of every

week eating mostly zucchini on his rotation diet. We try to remove

the seeds but they're so tiny it's very hard. What do lectins do?

Why might I want to be concerned about them?
