Cheese can become crunchy when melted and makes a good cracker. Then there's the carrot chips and other vegetable chips and somebody bakes mushrooms and they become crunchy. He now tolerates and eats all textures, swallows pills and capsules, etc. Hang in there! If you ever need tips on good feeding therapies and programs, email me. Carrots, many squashes and beet will not work since they are medium or high oxalate and my daughter cannot tolerate it. She is still casein free so no cheese either, but I will try that some time later when she gets better. I will definitely check out the mushrooms and zucchini chips. Someone wrote that oxalate issues and phenol issues will go away if you follow SCD religiously and suggested to continue giving all these food on rotation. I sure hope these issues go away soon and we do follow SCD strictly. However, my daughter reacts to oxalate food the moment she ate it. She had nose bleed when she ate beets. She was terribly sick on SCD Intro Diet because of the carrots in the chicken soup. She has been on SCD for 5 months and her digestion is not healed yet. She actually got worse AFTER she began SCD UNTIL we realised that she could not tolerate high oxalate food and phenolic food and removed those while keeping strictly SCD. Yes, I think Elaine's work is great and SCD heals. But there are kids or grown-ups who may have issues that need some extra care before the healing takes place. There's not much detail, but here it is (I know the part about beets won't help you Here's how to get a veggie snack, Cut up beets or squash, in the food processor spray with oil, add seasonings and legal herbs and bake until crunchy. Mushroom, being pure fungus, would just feed their problems, wouldn't they? I've seen a few times now, mushroom recipes posted. I'm currently reading another SCD book 'Gut and Psychology Syndrome' by Dr.Natasha -McBride, ISBN # 0-9548520-0-1... you can get it at the healing crow website. Guest guest Posted May 7, 2006 Report Share Posted May 7, 2006 As my son's liver and kidneys have healed, and his intestines with SCD, enzymes and targeted supplementation, his metals have come down and his tolerance for phenols has increased. We have been on the diet for 19 months. By reducing the high phenol foods, I believe we helped give the body a bit of a break, similar to what intro diet does for the gut. If you are struggling processing phenols, backing off awhile healing may be a useful tool for some. We still do not eat much in the way of nut products, a handful of sprouted nuts here or there, or nut butter, these are considered special treats. I do not believe eating a diet very high in nuts is any better than eating a diet high in grains. Nevertheless, we have been able to adapt SCD to our issues, in quite a few ways, and have been healing from it. In my mind locating the freshest quality milk, meat and produce is every bit as essential to this diet. For us, making the diet most effective included sleuthing around for our hidden problems, researching and forming a strategy for dealing with them. I believe there are a number of techniques out there, within SCD guidelines that can be utilized for healing and introduction of foods. Good luck with the oxalate issues. Some people report success by limiting them, and after a period of time, reintroduction slowly of foods after a period of enzyme tweaking and taking a bit of lemon water after eating.
