Sue, could you tell me which almond cookie recipe you use? I have been

trying to make a cookie that will hold together well enough to send to

school, but all the ones that I've tried crumble so bad, there is no way I

can use them to send.

9 yr old add son, 5 yr old asd son, 3 yr old developmentally delayed

daughter (not sure why)

Biscotti are firm and crisp. You have to " double bake " them.,

These cookies hold together well and are super easy. I adapted it

from an old recipe that I used to use when babysitting. :)

Peanut Butter Cookies

1 cup peanut butter

1/2 cup honey

1 egg

Mix together.

Roll dough into small balls, flatten with oiled fork.

Bake at 350 for 6-9 minutes.

Makes about 24 2.5 inch cookies.

I don't see why it wouldn't.

You might want to add a bit of salt to the recipe though since almond

butter is usually unsalted.
