The recipe is on pecanbread.com.

Be sure to strain it through a cotton tea towel if you are going to

give it to Kiki.

She may very well be able to tolerate it. You'll just have to see.

I usually make mine with twice as much water as the recipe calls for

so that it comes out the same texture as cow's milk.

(from the www.pecanbread.com <http://www.pecanbread.com/> website under

recipes)

COCONUT MILK

1/2 cup unsweetened coconut flakes

1/2 cup boiling water

Blend together until coconut is finely ground.

Strain through a fine sieve or a piece of clean muslin.

Squeeze to extract all the liquid.

Makes about 1/2 cup

Coconut is harder to digest and is generally tolerated well into the diet.

There is a recipe for coconut milk on one of the BTVC websites. Not sure

which one though. It is relatively very simple to make. Just use the same

amt. of boiling water and unsweetened coconut flakes. It is great to make

the coconut cream pies! Yummy! Jenn & Kali 10 months SCD----- Original

" How long can you store it in the fridge before it turns bad? "

Jenn,

I honestly don't know. I'd make a guess at 4-5 days.

Mine never lasts that long because I usually just make the exact

amount that I need for something.

Sorry I'm not much help.
