Guest guest Posted May 6, 2006 Report Share Posted May 6, 2006 We try to rotate our nut meals and flours since we are healing out of many sensitivites, thanks to a injured gut. The walnut flour is wonderful, but from my own experience when I process it in the food processor it turns into walnut butter and become clumped and thick. After I do this I messure the amount I need then throw it back into the processor for a second spin with an egg or two depending on what the recipie called for. This seems to break it down more into something easier to digest and makes it smoother. Then throw it in the kitch aid and mix the rest with the rest of the ingredients. I have not made bread from walnuts, I personaly do no think it would turn out well. But Walnuts do make wonderful nutty flavored cakes and cupcakes. Also good substitue with the peanut butter cookies, that usualy call for almond flour. Guest guest Posted May 7, 2006 Report Share Posted May 7, 2006 I've used walnut flour... It has a stronger, less appealing taste than hazelnut or brazilnut, which I think are the best.... I think you should buy a small amount of each of the flours, bake muffins and see what you like... www.digestivewellness.com has a variety of meals and finely ground nut flours. Walnut could be mixed with another flour, ... you might want to rotate it. Peacan is also strong,... but not as strong as walnut. (but then I had really low expectations for it!). You could buy a package of walnuts at the grocery store, grind them in your food processor, and do a test batch of muffins with the flour before buying a larger amount. Walnuts aren't as sweet as pecans (i.e., that is why there are pecan pies but not walnut pies).
