I think Mimi knows why som fermented foods are good and others (ie- alcohol) aren't. God knows unless you call the company what they are using to ferment this stuff with. If it is Bifidus or yeast Elaine DID NOT LIKE IT. And don't use if it contains these two! Don't go slow...don't use it. You may have to call the company if the moderators can't tell you that it is safe. Some of us on this serve have good intentions, but truly do not send the message that Elaine taught us...that is proven to work. It just depends. Some people with systematic fungal infection may see worsening of symptoms if that particular strain desires the vinegar as a food source. Like any new food should be introduced, introduce it at a time of eveness, slowly, and by itself. Apple cider is fermented from apple juice. Apple cider vinegar is produced from a second fermentation. However, Elaine stated that any product we do not make at home ourselves, we should get a letter on company letterhead stating nothing additional is added. If someone has time to ask this of Bragg's, you might want to specifically ask if any additional microbial agents are added to accelerate fermentation. If this were an issue, one could then pasturize. Apple cider itself is approved by Elaine if no sugar is added, if this, in theory, were further fermented with no additional sugars or innoculations, this would be legal. It is very easy to make one's own raw apple cider vinegar by fermenting their own fresh cider this fall. I will be interested in hearing any information about Bragg's too!
