I found what looks like a great recipe for a casserole, with farmer cheese, shredded cheese, tomato sauce, topped with parmesan but I lost it, so I may improvise. Guest guest Posted March 28, 2006 Report Share Posted March 28, 2006 I make Zuchinni lasagna a couple days ago...still eating the leftovers. It worked for me! I used the Vegetable and Meat Lasagna recipe from SCD recipe site...the zucchini was a little al dente for my taste...I think next time I'm going to boil the zucchini noodles first (just like you do with " real " lasagna noodles) and use SCD legal spaghetti sauce instead of the tomato juice. I also used DCCC in place of the ricotta...worked pretty well!
