Patty,

Do you cook it first or is it raw? Interesting (but worry about the lectin in

the seeds...we would probably scoop them out), we have problems in this house to

weird things.

Peel the zucchini and cut into small culbes. Take out the seeds if they have

become hard, but if not, the center with the seeds can be used too. Fill the

blender about 1/3 full and add a small amount of water. Liquify in blender. It

takes a few minutes, but soon you will see a thick white zucchini milk.

I used to use this years ago when dairy free, but I can't remember any good

recipes for it. I guess I'll have to experiment again. I do have a small cook

book with zucchini recipes in it, (including zucchini milk), so when I have more

time I will look and see if there is anything compatible with scd in it.

I checked my recipes and did a search, and they all say to just peel the

zucchini and cut into chunks. No mention of cooking. I don't see why you

couldn't just scoop the seeds out and experiment.

Antoinette, what are lectins? My son spends two days out of every

week eating mostly zucchini on his rotation diet. We try to remove

the seeds but they're so tiny it's very hard. What do lectins do?

Why might I want to be concerned about them?
