Its tough but you will get the hang of it and it wiil get easier. I have had to cut way back on everything else, especially work. I am trying to go down to less than parttime just because I am so tired. I have been doing the diet for 1 year 4 months for myself and for my kids 7 months. Doing it for the kids are harder. I also pray alot. It really helps to keep me going. The beginning is the hardest so keep the faith. I told myself that it was just like going to grad school, it will be tough for a few years but it will pay off in the long run. Some suggestions I have is to make double batches of everything you make and freeze half. For a little while I was using alot of frozen vegetables because you don't have to cut them up. I go to Whole Foods and their frozen veggies are wonderful, ie green peas, french green beans. My kids really like them. Recently, I'm trying to get back to more fresh vegetables after having given myself a break. You may have to wait on the nut flours but the bread can last for days, waffle recipe really goes a long way, and the pancake recipe can be made very quick (they cook much faster than regular pancakes). When I am just too tired to cook and didn't take anything the freezer for the meat - I make omelets - its usually a hit. One of the other things I have done to help me get through this diet is I challenge myself to make new recipes. I have been making alot of curries lately which I have never done and only one of my daughters will not eat it. The SCD legal curry dishes come out delicious. I use regular recipes and just take out the illegals. I am going to try in the next copular days to post some recipes I have made which have been a big hit with the kids and my husband. Good Luck!
