It is used as a thickener in jams, and occurs naturally in some fruit, like apples. In apples, it's mostly in the peel, and so for someone beginning the diet, you normally wouldn't get too much from eating an apple, because you'd peel it. But if you drink fresh pressed apple juice/cider/stuff you do get more pectin from the peels, and that's what part of the sediment at the bottom of the jug is. So you shouldn't shake it up too much before you pour yourself a glass. Pectin as an added ingredient is not legal, as it is a complex sugar.
