Guest guest Posted April 11, 2006 Report Share Posted April 11, 2006 My son became rather Jelous that the girls had their own recipe. So have been experimenting. Finnaly came up with a good one. Wanted to share! They are hardy and do not fall a part easily...mostly they taste great! Freeze well, reheat in mirowave welll and just are wonderful! Thanks to phenol sensitivty we do not use almonds or peanut butter, among other things...I offer suggestions to those who can relate. I almost called them " rage free " pancakes! lol! Boy Pancakes or Waffles 1 cup nut flour (we like to use Hazel nut) 3 eggs Beat together (not too much) Add: 1/4 cup favorite nut butter (we like to use Cashew Macadamia Butter) 1 T Honey ½ teaspoon baking soda ½ teaspoon SCD safe vanilla Mix together (again not over doing it…try not to get air into it). Batter is suppose to be thick…will " melt " and spread when cooked. A few frozen Blueberries (do not mix into batter) Heat griddle or waffle iron that is well greased/oiled Put in pan, will spread when " melts' so be careful to leave room around so other pancakes do not melt into each other. Put blueberries on to make happy faces or other designs! Flip cook other side…and wala Boy Pancakes! If using waffle iron make sure greased and be careful to not add too much batter…these guys spread and will easily cook over the sides! Very filling, THICK and tasty! Top with honey, maple flavored honey or favorite SCD topping! Enjoy!
