I was wondering if anyone who is insulin insufficient or Diabetic and needing to pay attention to carbs, would share their daily menu plan. I am a vegetarian and I am having a real hard time keeping my carb count to a minimum. I don't want to be a Dr. Atkins follower and only have 10 carbs a day. It is amazing how quickly my carbs add up with regular meals. It isn't a serious issue, because I use an insulin to carb ratio, so I just add up my carbs and give the appropriate amount of insulin. My Endocrinologist told me to consume 30 carbs each meal. Have you tried to make a menu plan with that. A banana costs 30 carbs, vegetables are high, and forget pasta, bread, etc. But not eating meat, limits me. Are there any other vegetarians (that do not eat meat, poultry, fish, etc.)? Before I got Pancreatitis this wasn't hard, because I had so many other food choices that I could choose from. Now there are so many foods that aggravate my pancreas, it has become a struggle.
