Guest guest Posted May 23, 2006 Report Share Posted May 23, 2006 Hi Carol, For ginger tea, I take a piece of fresh ginger root, chop it up finely (can use the food processor), and place in a quart of boiling water. I bring up to a boil, then lower heat for a good simmer for about 30 minutes, with a lid. Then I strain and add honey. For a cold, this is a great rememdy, you can add some lemon to it after cooking the ginger. If all you have is powdered ginger on hand, you can use that...you do not need to cook it as long, still good, but nothing beats the fresh ginger. For peppermint tea, I just go pick some leaves from my garden. I detest store bought peppermint teas, the volatile oils in peppermint oxidize rapidly when powdered. You can buy fresh dried peppermint leaves for cheap at www.mountainroseherbs.com , which is my favorite herbal supplier company, for cooking herbs too, very fresh always, way more flavorful, and no preservatives what so ever. Actually, now you mention crockpots, that is a good way to make a ginger tea that takes longer, but will fill the house with that fresh clean, lemony ginger smell to boot!
