Guest guest Posted March 27, 2006 Report Share Posted March 27, 2006 I looked through the pdf of SCD Recipe and found a recipe for Coconut Bread if anyone is interested. It sounfds tasty. COCONUT BREAD Ingredients: butter,melted 3 tablespoons eggs 2 dry curd cottage cheese 3/4 cup salt 1 teaspoon baking soda 3/4 teaspoon water 1/2 cup almond flour 3 cups unsweetened dried coconut 1 cup Instructions 1. Blend butter, eggs, dry curd cottage cheese, salt, baking soda & water in food processor or blender until smooth. 2. Pour into bowl and stir in flour and coconut. 3. Scoop batter into 3 small buttered loaf pans. Bake at 325 F oven for 50 - 55 minutes. 4. Toast in toaster oven and serve with butter & creamed honey. - Carol F.
