I understand the boredom issue, we are dealing with this too. If they eat pancakes, I'd experiment with several different flavors, this is a good way for hiding extra veggies. For breakfast, I make a few variations of different pancakes. I also just make quick sausage patties using ground pork, lamb or turkey using salt, pepper, sage and maybe a little honey. Sometimes I grate an apple and add it to them. They always have a banana while waiting for breakfast. I also usually cook up some frozen berries to go along with breakfast. For pancakes, they usually have " pumpkin pie " pancakes or apple pancakes. I have also even added banana and avocado for green pancakes. These recipes feed my two boys for one meal (about 8 pancakes). 1 cup pecan meal (or almond flour) 4 eggs 1/3 cup pureed cooked squash (or 2 apples shredded or one bananad and 1/2 avacado) 1/4 tsp vanilla 1/4 tsp baking soda cinnamon, nutmeg and ginger (or cinnamon only) the syrup is 1/2 honey 1/2 cider heated I also make " donuts " with a variation of the recipe (1 less egg, 1/2 the fruit, and 2 TBS honey) and pour it into well buttered donut pan and bake at 325 for about 18 minutes. The look like miniture bunt cakes (cupcake pans) that make donut shapes. I recall it said 'as seen on TV' It had a regular donut pan (makes 6) a mini pan (makes 12) and a jelly donut pan (no hole in the middle). The jelly donut pan in great for making hamburger rolls. I haven't ventured into trying loaves of bread. The great thing about the pan is it's easier to make sure they cook through and its an individual serving to just cut in half and make a sandwich. The user feedback comment on the page is terrible, and is probably true if using regular SAD ingredients. For OUR type of cooking, these are a godsend. I would suggest though, to thoroughly grease the pan with a solid fat such as butter or ghee, not a liquid. It is hard to get out of the pan otherwise. Even with butter, the donut pan with holes can be tricky, make sure to grease the hole part well and loosen with a butter knife when slightly cooled.
