When one makes the coconut...this heats it up so nothing can survive in it....not even the yeast. This kills off the yeast. So all you have is good bacteria fermenting in the coconut and honey. So yes, If you make it wrong it could be a yeasty disaster. But just like the yogurt it you eat too much of it, it causes a huge die off reaction, and Elaine didn't want us eating it in the beginning. Because this " die off " makes a person feel horrible sick. This is what happens if you eat too much SCD yogurt too. So like the moderators say. Go slow with that too. Buy activated charcoal capsules, and Epson salts to soak in a warm tub. And this will help with the symptoms. Many think the yogurt is the secret to success with the SCDiet. May want to try goat...it seems to be easier to digest for some of us. So yes, If you make it wrong it could be a yeasty disaster. " I am confused. Are you talking about making coconut yogurt or coconut kefir? Yogurt starter has bacterial cultures. Kefir starter has both bacteria and yeast cultures. So, heating the coconut milk has no effect on whether you get yogurt or kefir. It's the starter that is used that determines whether you get yogurt or kefir. Elaine did not recommend Kefir for the beginning of the diet.
