We have been eating fairly substantial amounts of organic beets during the last year, and our son's glutathione levels are now within normal ranges without any glutathione supplementation. They are also high in folate and potassium, and increase CD8 cells (responsible for eliminating abnormal/precancerous cells--which is why we started eating them by the bushel!) Beet chips are a great way to start for those who aren't crazy about the taste or color (make like carrot or zuchini chips). Also--urine and stools will be RED when you eat beets. Guest guest Posted April 10, 2006 Report Share Posted April 10, 2006 I can't get my kids to eat beets as is. So I make beet/raspberry jam and bett /strawberry jello. Jam: I mix up equal amounts of cooked beets chopped fine with cooked raspberries and add a little honey. Jello: I use the water from cooking beets. I use 3 pkgs Knox powder, 3 cups beet water and 1 cup strawberry juice(from cooked frozen berries) with a little honey and added the cooked strawberries. It tasted pretty good and my kids didn't bat an eye.
