VEGGIE LASAGNA

1 box frozen chopped spinach

1/2-1 lb shredded fresh carrots

16 oz low fat/fat free cottage cheese

3/4 cup egg substitute or 3 reg eggs

mix in lg bowl and set aside

1 lg jar prego spaghetti sauce (I use the traditional No meat or

cheese)

1 1/2 cups tomato juice

2-3 Tablespoons Oregano flakes

2-3 Tablespoons Parsley flakes

mix in 2nd bowl and set aside

You will also need uncooked lasagna noodles and 3 cups low fat

mozzarella cheese shredded

LIGHTLY grease 9x13 pan (I use light Pam spray)

cover bottom with approx 1/3 of spagetti mixture

cover sauce with uncooked noodles

over noodles spread about 1/3 of mozzarella and 1/2 veggie mix

repeat layer of sauce,noodles,cheese and veggie mix

final layer should be spaghetti sauce and mozzarella cheese

bake at 275 for 30-45 minutes

This is a fun recipe because you can add veggies you like and play

with it. I like to add mushrooms.
