Help with Mida's gold pancakes

These always come out ugly. We love to eat them!!! I was thinking about making

them

for company, but they never come out " pretty. "

They have to get almost black before they'll hold together for me to flip them

over.

Could it be because I cook them in coconut oil?

Any suggestions for a prettier pancake?

I love these, because I can freeze them and take them when we travel.
