I've been having fun with good nutrition, shopping, and cooking, and my family gets the benefit of it. My son had a piece of my zucchini lasagna and the regular kind I made for them, and he liked the zucchini much better! After he said that, I tried a bite of the regular, and after the zucchini it tasted bland. Thanks to whoever on here suggested it. I think it was more than one. Now I've got to think up more ideas of what to do with it. I do love zucchini. And thankfully my doctors want me to get fruits and veggies, so I'm obliging them. Guest guest Posted January 13, 2004 Report Share Posted January 13, 2004 Hey Joan, I add it to my spaghetti(in place of meat), I also sautee it with bell peppers, onions, garlic and add some cheese to top it off (for protein)...oh the wonders of veggies...i made some lasagne with spaghetti sqaush, really good, but spaghetti sqaush is kind of expensive...what did you do to the zucchini before you added it to your lasagne? wow all this talk about veggies is making me want to be creative...i bought some frozen artichoke hearts at trader joe's the other day...some low fat italian dressing and dumped them both in a bowl...viola! marinated(low fat) artichoke hearts...and oh so good! i shy away from pasta, so i am thinking about spaghetti sqaush(non pasta) pasta salad...egg plant is also good for lasagne layers...let me know if you have any ideas to pass my way... I really don't like zucchini but thought I would try it T. I didn't pre-cook the zucchini, as the lasagna cooks for an hour. I just sliced very thinly longways. Some of the thicker pieces were crunchier, but I still loved it. I have got to go to Trader Joe's. My mom's been recommending it for years, and I've never stopped. For now, the zucchini lasagna was as creative as I get, but I may get some diet cookbooks out and see what I can find.
