This sounded wonderful . I think I like the rotel chilis and tomatoes

better than the seasoning packets and might just try it that way.

yummy... let me tell you about my dinner

Well.. I made Shreaded Chicken Chili tonite for dinner.

It was SOO Good.. I almost wished I had a bigger stomach so I could have

eaten more!

I used:

2 packets of Chili seasoning

4 4oz cans of plain tomato sauce

2 Cans of Dark red Kidney beans.. juice and all

Dumped the above ingredients in my Crock pot.. set on High

Put 2 large chicken breasts on the bone (about 1.5 lbs of chicken)

in a corning wear and put in oven.

Baked for about 1 hour and 20 minutes at 350.

Let cool a bit on top of stove.. stir chili.

Then.. I took the chicken off the bone and shreaded it.

Chopped up some onions.

Put in Crockpot and continue to cook on high for about another hour.. then

turned down low until

ready to eat.

Top with Cheese.

My husband had 2 huge bowls of it... so much for lots of left overs!!

keep here by the computer and I write down tips, do's and don'ts and

recipes that you all share!!!! As I was writing this one I thought " I

will definitely save this for our next cold front " as I am here in

Miami with my A/C on too!!!!!!!!!!! I am still pre-op, waiting for

Cigna's decision on my appeal! Hope to find out this week, and if

it's denied again - will appeal again!

Congratulations to all of you who are losing - best wishes to all of

you who are nearing surgery date - and good luck to those who are

fighting or waiting for approval!!!!!!!!!!

Carol, good for you! Stick with the appeals. I was told that some

insurances just turn it down at first, and then approve on the appeals.

Guess it's their game??
