I've missed ketchup this last year, and finally got around to making a batch. I

was not optimistic I would like the taste (cinnamon? cloves? all spice?), but

gave it a whirl anyway. It's really good! Took forever for it to cook down, but

I'm glad I finally made it. It only took a few minutes to throw the ingredients

in, and I checked in on it now and again, so it wasn't time consuming at all.

Here's the recipe I used (only did a half batch though).

So with the permission of Sharon J (thank you!), here is her recipe:

2 Cans of Tomato Juice (46 oz each)

2 Cups Vinegar

2 tsp. onion powder (homemade)

8 tsp. salt

1 tsp. all spice

1 tsp ground cloves

1 tsp. cinnamon

1 tsp. garlic powder

5 Tlb. honey

Method: Pour Tomato juice in large pot and add the rest. Simmer for several

hours, stirring occasionally (a splatter screen is useful here, because it will

splatter quite a bit towards the end). It is done when it has the ketchup

consistency you desire.

I made this and it is delicious! I made the full batch and have little

containers of it in the freezer. I'm somewhat obsessed with butternut squash

fries and this complements them perfectly. Thanks for posting.

Hi, I'm Tamra and new to the group. I'm thru with the intro diet and on to stage

1 and seem to be tolerating things well. I'd like to try the ketchup recipe but

I have pretty bad oral thrush and can't tolerate honey or vinegar. I'm thinking

of trying it with lemon juice instead of vinegar and green stevia leaf instead

of honey. It does sound wonderful for butternut fries.

You might consider apple cider vinegar instead of white vinegar and

honey. I use this in my mayonnaise and find it adds just a touch of

sweetness to the mayo without adding the taste of honey.

I froze the ketchup in silicon mini muffin cups (they peeled out easily), and

then wrapped them individually in plastic wrap. Whenever I need ketchup, I pull

one out about an hour before dinner to defrost. They're the perfect size!

Have you ever tried something like coconut butter?

I don't drink coffee but it's very easily 'melt in your hand' and very

rich. I have artisana raw organic virgin coconut---it's soo good. I

would imagine if I drank coffee, I'd use that in it instead of cream.

I guess that depends on how much you like coconut tho.

rich. I have artisana raw organic virgin coconut---it's soo good. I

would imagine if I drank coffee, I'd use that in it instead of cream.

I made this, too, and I agree - it's totally awesome. I used apple cider

vinegar.

I only made half the recipe, and then 1 split the resulting ketchup into 2

portions - one I froze and the other I kept in the fridge for turkey burgers and

scrambled eggs.

I think it should keep a good while in the fridge because of the vinegar. Isn't

that a natural preservative?
