Guest guest Posted January 31, 2010 Report Share Posted January 31, 2010 Hey guys , just finished my first conversion of a fish recipe, I think it came out pretty good :Pan fried cod with mushroom ragout : 3 tbls Butter 4 tbls olive oil 1 shallot 8 oz crimini mushrooms 8 oz white mushrooms 3 cloves of garlic 1/3 cup of diet gingerale lemon peel from 1 lemon lemon juice from half a lemon 1/2 teaspoon of thyme Melt 2 tbls butter with 4 tbls oil when melted add chopped shallots cook till soft . Add mushrooms and cook till they are soft. Add rest of ingredients and cook down, when thick stir in last tbls of butter. Add salt and pepper to taste. Cod seasoned with salt and pepper and fried in butter and olive oil . I served it over a bed of cauliflower mash with chives. I think what I might sub is some ginger tea instead of the soda, and perhaps a touch of honey. You don't need the fizzy of the soda -- it'll be gone by the time you finish cooking the sauce down. Not sure about cooking with it, but the only reason it's allowed once per week according to BTVC is because the diet would be impossible and nobody would follow it if people were so restricted since alot of people are "addicted" to sugars. Diet soda still has sugars that bacteria can digest even though none of it is used by our bodies. So which is it? It doesn't really matter that much to me because I don't drink it anyway but I figured I would ask anyway. I should, perhaps, have clarified that -- I consider aspartame to be illegal because the very few times I've tried a soda since being SCD, it generated an appalling craving for starch, starch, starch! It used to do that to me pre-SCD, too. One diet soda used to result in my eating an entire large bag of Doritos or something similar. So, I sort of placed it in a for-me-illegal category. It doesn't take much of the 'syrup' to make a glass, so adjust to taste. http://www.scdrecipe.com/recipes-drink/ginger-ale/ Yep. Great recipe. But, since you won't have any bubbles left by the time the original recipe is cooked, I don't see any point in making the soda to use. The sweetened ginger tea is the equivalent of that soda, but made with plain water.
