New to SCD and need help with Stages

Hi --I'm in Anchorage. :) Have you had any luck finding DCCC or

Farmer's cheese? I haven't. I guess I can do without it but would be nice to

be able to try some of the recipes...they sound good. :)

DCCC is, indeed, useful, but it's entirely possible to do SCD without it.

The first four years, no one, and I do mean NO ONE carried DCCC here in

New Orleans.

Ironically, after Hurricane Katrina, we were forced farther afield to get

food (because many of the stores had been destroyed) and I found a shop

about 50 miles away which carried it regularly. Since it freezes well, I

started ordering entire cases of it, bringing it back (once we'd replaced

our freezer) and freezing it.

If you can't find it, make lots and lots of SCD yogurt and drip or drain

it well. It works just as well in most recipes, and, in fact, there are

some recipes for which I prefer dripped yogurt, aka yogurt

cheese.

Hey - I haven't had any luck finding DCCC up here. I can't tolerate any dairy right now, but before I realized that I sent my husband all over town looking for the stuff- but no luck. I know you can use dripped yogurt as a replacement in recipes. There's also a sausage company, bluesealkielbasa.com, that carries the Friendship farmer's cheese and they ship ''anywhere in the USA'' according to their website.
