I live near Buffalo, home of the chicken wing (and the Anchor Bar that developed them). If it tastes like theirs, or like "Buffalo" wings in general, then I do know (and it's pretty darn good!). The ingredients sound right. (But the Anchor Bar's sauce has illegals in it, unforutnately.) Emeril's sauce -- which my grocery store sells -- works for me, but it may not for some because of the last ingredient. If you want crispy wings they get crispiest being placed on a rack in your pan, and to control the grease, a not-too-shallow pan: NOT a cookie sheet. (My turkey roasting pan -- high sides with rack in the bottom works perfectly.)  You could also just fry them in grapeseed oil or peanut oil until they're as crispy as you like, both of those oils are good for you, especially the grapeseed oil, and it has a high smoke temperature (then add the sauce, and some butter, if you can eat it, as restaurants do). Forget about all those other ingredients that some people put on the wings while they're baking -- if you're baking them; not necessary at all. Just bake crispy, then coat with sauce. Eat.
