I don't think we're supposed to soak nuts, according to Elaine, because it

increases the mold content (already an issue with nuts, I believe). You should

probably have this confirmed by someone who knows more than I.

Elaine was against soaking nuts because of the risk of mold.

When I make pecan butter I warm the nuts for about 5 – 10 minutes

at a very low temperature (either in oven, or in cast iron skillet on stove,

stirred). The pecans release their oil more easily when they are warm. That

said, I have yet to achieve a smooth, creamy pecan butter. I grind the pecans

in a mini Cuisinart but it never quite turns to a paste. I enjoy it regardless.

I haven’t tried other nuts yet.

Elaine had a mold fear with soaking. Though I find that I digest them much

better if I soak; even more so if I soak and then dehydrate.
