Pam,What about lemon curd? It is made with 1/2 c lemon juice, 6 egg yolks, 1/2 butter chilled in cubes, 1/2 honey. Using a double boiler or a non-reactive bowl over a pan of gently boiling water, whisk the juice, egg yolks, and honey together. As it warms, add a piece of butter and stir until melted. Continue doing the same with all the pieces of butter. Cook for about 5-10 minutes more until thickened. Let cool and chill. I just made some lime curd. Indistinguishable from lemon curd, both in looks and

taste ;-). It's dang good though! I think I'll experiment with less butter next

time, because it's too rich to have more then a couple tablespoons at a time.

One of my favorites: Cherry Clafouti! You need to sub baking soda for baking

powder to make it SCD legal:

Do you eat yogurt? If so, my favorite vanilla ice cream recipe is at

BTVC book), as in the Pumpkin Pie recipe in BTVC (I sub butternut squash for

pumpkin).

I haven't tried it yet, but this White " Chocolate " recipe looks really yummy:

I went through this too. I found that cutting out honey helped. I was putting it

on yogurt and in peppermint tea. Those carbs add up. I don't miss it.

Yes, I have to watch it and it frustrates me. I had to watch it before SCD too,

except when I was sick. It's good to feel well thankfully, but I can't eat

everything as much as I want. I found that I have to limit the nuts and carbs.

Fats are ok, but in limited quantities too. It seems unfair to be on a limited

diet and have to limit that too, but being on healthy foods helps.

The " good " part about gaining weight is that the body is finally absorbing

things. Then some have to watch it. And it varies from person to person. My

husband is one of those people who can eat anything and not gain an ounce.

I started SCD last July and in the first couple of months lost a few

pounds. This put me a little below the middle of my height/build

category. Things stayed that way until last month when I couldn't

figure out (not having changed the diet except adding a few veggies,

no baking yet) why I suddenly gained five pounds! Then I read that

taking care of candida can allow one to gain weight that couldn't be

gained before, implying this was for skinny people. Well, I wasn't

skinny and wanting to gain, because this now put me in the upper part

of my weight limits. But, I am just cutting back a bit and have lost

a pound or two. Just some fine tuning.
