I miss Mexican food sooooo much and I am hoping I can tolerate spicy food again. In the spirit of experimentation, does anybody have any recommendation for legal Penzey's spices that they love or can't live without? They don't have to be Mexican spices, anything delicious! In 2005, before we headed back to New Orleans, I hit the Penzey's store in Birmingham and bought a small container of every spice they had that was legal. The containers nestle nicely in my drawer, alphabetically, so I can find what I need. I refill them from larger bags for the ones I use lots of, and just get a new container for the ones I don't use much of. They are so fresh and flavorful. And I don't have a dehydrator so it's nice to know there are a few conveniences out there I was bummed to see that ALL of their vanilla's had sugar added to them. As for arranging spices alphabetically... this diet definitely takes major organization. I might add one thing: one time I ordered a quarter pound of bay leaves. You have NO idea how many bay leaves this is! I'm still going on it! I was really disappointed, because before SCD, I loved their double vanilla extract! I have lists of what I need for which item. And I print out, for special occasions, mini-cookbooks with all the recipes for, say, Thanksgiving. And I create lists for each dish, with the ingredients for each one. I then mark off each ingredient as I buy it, and each ingredient as it does into the dish, and each dish as it's finished and placed on the warmer.
