Hi-

I need to go on a vegetarian SCD (yogurt ok, but no eggs/meat/poultry/fish) for

four days this week for religious reasons of my mother and remembrance of my

dad, who passed away last year this time.

Can someone please give suggestions on how I do this. I do not have time to cook

all day -- going to be busy work week.

I can do yogurt-fruit smoothies, vegetable curry/soup, and almond milk. But

there's not enough protein or calories in this. I have not tried lentils or

beans yet -- that's one option.

Do you think I'll be ok doing this for four days without losing energy?

Any suggestions?

Thanks,

Andy.

Something Kat suggested that I find good is ripe avocado with a little olive oil and salt on it. Lots of calories in them but it's still going to be very hard to not feel tired. I know i've gone back to stage 1/intro and I don't have so much energy. Other than that, can you tolerate eating lots of fruit or squash? Is that going to give you a reaction? If not, try making lots of butternut squash, mash it with as much butter salt and pepper as you like, and take that with you. It will last a long time at room temperature so you can bring some around with you. The more butter you add the more calories too. Or make the pumpkin pie filling out of it. IT's just mashed butternut squash or pumpkin, spices, eggs, and honey.-UC - 1+ yearsSCD - 8 months 100% strict and 4 months restricted diet.Asacol - 12 pills a day Prednisone 40mg entocort With vit E mixed inBack to intro/stage 1 for now.To: BTVC-SCD From: andy.thestud@...Date: Sun, 21 Mar 2010 16:13:27 +0000Subject: Vegetarian SCD

If you decide to try lentils (although legumes are usually an advanced

food, and may not be a good idea this soon after your flare), I would go

with the split red lentils, and then soak them for about eight hours,

toss the soak water, rinse, and then cook them in whatever -- broth,

tomato juice, etc.

Can you handle fats at this point in time? If so, you can add extra

healthy fats to everything to increase your calories.

What about legal cheese? Or is that a no-no during the religious

period?

I'd make a big pot of multi vegetable soup or a vegetarian curry. That way

you have a base food without having to cook every single meal.

Also, what about fruit muffins.

Milk products are okay.

I don't have time or nor do I know how to make muffins.

I guess I will go with smoothie in the morning, vegetable soup for lunch, and

vegetables and almond mlk for dinner for 4 days.

Any recipes on a rich vegetable soup is appreciated.

Thanks.

What about vegetable stir frys with fresh garlic, onion, ginger, sesame oil, etc.?  You could use any vegetables tolerated--broccoli crowns, yellow squash, zucchini, shredded carrots.

Another idea is "banana cake"You basically make banana pancakes ut put it in a caserole dish. Take equal number of bananas to eggs, blend, then pour into caserole dish and bake until it's brown. You can cut into squares and freeze then take one out whenever you want it. Plus, it doesn't stick to the pan so easy cleanup. Andy,

I would suggest things like nuts, nut butter, more fats of whatever

kind you can use. You can get pretty full on nut butter and it's

quick and easy. Avocados are good, too and good with things. Things

like bananas are quite filling if you can handle them. I don't

remember exactly what you are able to eat but to some extent you may

just need to add more of those, and fill in around the edges with

higher fat things as you can. Good luck. It probably will be a hard

four days. Also plan to nibble often.

Have you tried baby lima beans?  Those are advanced but I was able to tolerate the baby limas (frozen and nothing added to them) very early on if you cook until soft.  I use Safeway brand.

Andy,Can you handle nut butter? That is another one that is good for calories. You can actually toss a bit of it in a smoothie and never taste it. Coconut oil is another good one to put into smoothies for added calories. Someone posted a really good smoothie recipe with 1 medium ripe avocado, 1 1/2 cups fresh pineapple (could get away with canned if in its own juice), 1/1/2 cups orange juice 1 tbsp honey 2 tsp lime juice and 1/4 tsp coconut flavoring. It is really filling. You can also use yogurt to make a kind of cheese that is just like paneer. You will need to heat on a very low heat a quantity of yogurt (you will loose about 1/2 the volume) for about 1 hour until the yogurt separates -- very low heat is important. Then cool and strain, then drip

from muslin and finish as normal. You can make blended soups and add a bit of nut butter there (or in curry sauces) as well for added fats and protein.AmeliaTo: BTVC-SCD Sent: Sun, March 21, 2010 4:13:27 PMSubject: Vegetarian SCD

Hi Andy,

You can put a hand full of nuts, or some

nut butter, or some tahini on an avocado with

vegetables, or just on vegetables. It’s

quite filling and satisfying. If you put butternut squash in the mix, even better. I also like nuts and raisins mixed with

yogurt.

Hi - I'm sure you'll get a lot of great suggestions. How about these:

1. SCD cheesecake made with dripped yogurt/DCCC

2. nut butters (can you tolerate them yet? they are easier for some to tolerate

than are the nut flours)

3. http://www.elanaspantry.com/sesame-truffles/

If you don't have time to roll them into truffles, just eat the paste with a

spoon. The paste takes a couple of minutes to make, and you can flavour it in

different ways, for example, with cinnamon. Substitute honey for the agave

nectar (illegal) - use 1 part honey for 1 part agave nectar.
