Guest guest Posted March 21, 2010 Report Share Posted March 21, 2010 Hi- I need to go on a vegetarian SCD (yogurt ok, but no eggs/meat/poultry/fish) for four days this week for religious reasons of my mother and remembrance of my dad, who passed away last year this time. Can someone please give suggestions on how I do this. I do not have time to cook all day -- going to be busy work week. I can do yogurt-fruit smoothies, vegetable curry/soup, and almond milk. But there's not enough protein or calories in this. I have not tried lentils or beans yet -- that's one option. Do you think I'll be ok doing this for four days without losing energy? Lots of calories in them but it's still going to be very hard to not feel tired. I know i've gone back to stage 1/intro and I don't have so much energy. Other than that, can you tolerate eating lots of fruit or squash? Is that going to give you a reaction? If not, try making lots of butternut squash, mash it with as much butter salt and pepper as you like, and take that with you. It will last a long time at room temperature so you can bring some around with you. The more butter you add the more calories too. Or make the pumpkin pie filling out of it. Take equal number of bananas to eggs, blend, then pour into caserole dish and bake until it's brown. You can cut into squares and freeze then take one out whenever you want it. Plus, it doesn't stick to the pan so easy cleanup. You can actually toss a bit of it in a smoothie and never taste it. Coconut oil is another good one to put into smoothies for added calories. Someone posted a really good smoothie recipe with 1 medium ripe avocado, 1 1/2 cups fresh pineapple (could get away with canned if in its own juice), 1/1/2 cups orange juice 1 tbsp honey 2 tsp lime juice and 1/4 tsp coconut flavoring. It is really filling. You can also use yogurt to make a kind of cheese that is just like paneer. You will need to heat on a very low heat a quantity of yogurt (you will loose about 1/2 the volume) for about 1 hour until the yogurt separates -- very low heat is important. Then cool and strain, then drip from muslin and finish as normal. SCD cheesecake made with dripped yogurt/DCCC 2. nut butters (can you tolerate them yet? they are easier for some to tolerate than are the nut flours) 3. http://www.elanaspantry.com/sesame-truffles/ If you don't have time to roll them into truffles, just eat the paste with a spoon. The paste takes a couple of minutes to make, and you can flavour it in different ways, for example, with cinnamon. Substitute honey for the agave nectar (illegal) - use 1 part honey for 1 part agave nectar.
