In honor of St. Patty's day, I called them " Leprechaun Poop Roll-ups " and everyone at the party loved them! Don't you just love taking a SCD legal dish and it's one of the hits? Awesome! BTW: Here's what I did: Olive oil with garlic, onions, salt, pepper and 1 pound ground beef. Cook until beef is done. Cook chopped spinish (about 2-3 cups is what I used) Add beef to spinich and mix it in a blender or food processor until well mixed Take a couple eggs and blend a teaspoon-ish of coconut oil in with them Turn your pan on medium-high, add a bit of butter and let melt Pour in a small amount of eggs and let cook for about 1 minute. No need to flip if they are thin Lay the egg crepe on a plate, add some of the beef/spinich mixture, and roll it up. Perfect!!! A great dish that EVERYONE loves!
