Guest guest
Someone mentioned that birthday parties were difficult. Yes, they can be, but I've learned to make a big double batch of cupcakes and take them. The birthday child's mom has not minded (we've been to 2 parties). That way my sons can eat party food right along with everyone else. Went to a party on Fri. and the children ate more cupcakes than they did birthday cake! I make the chocolate cake recipe out of _Special Diet Solutions_ by Carol Fenster, and frost them with my own icing (1/2 cup spectrum spread to approx. 3-4 cups powdered sugar, some vanilla), and top them with gfcf non-pareils.
