Pop Tarts 2 1/2 c gf flour mix 2 tsp. xanthum gum 1 1/2 c sugar 1 c gfcf margarine 1 egg 1 tsp baking powder 2 tsp fruit juice (or water) 1 tbsp vanilla Preheat oven to 425 Combine all ingredients and beat until well mixed. Put in a plastic bag and place in refrigerator or freezer until firm. Roll out the dough on rice floured surface. Cut into cookie shapes. Place on ungreased sheet and smear favorite jelly or jam on half of cookies. Place a cookie without the jam on top of one with it and bake in the oven for 6-10 minutes or until slightly brown.
