Guest guest Posted May 15, 2001 Report Share Posted May 15, 2001 * Here are some easy to do recipes that my 6 year old son likes - ****************************************** Sweet Cornbread Mix together 3/4 cup sugar 1/2 cup oil Beat two eggs and mix into sugar/oil mixture. Set aside In separate bowl mix 1 1/2 cup GF flour mix (I use rice/potato/tapioca blend) 1 tsp xanthan gum 3 tsp baking powder 1/8 tsp salt 1 1/2 cups yellow corn meal Alternately, blend flour mixture, egg mixture and 1 cup milk sub. 400 degree oven Grease muffin pans and bake for 15 minutes Grease pan and bake for 30 minutes **************************************************8 NO BAKE COOKIES - you can substitute almond butter for the peanut butter if peanuts are a problem Put about 8 oz. of peanut-butter (or almond butter or cashew butter) and mix into it powdered sugar to make a firm consistency about 4 oz. (sift the sugar) and mix in GFCF rice krispies (or you can use Gorilla Munchies) Once firm and formed into a big ball put in refrigerator to harden a little. You can eat it like this, or - In microwave or double boiler melt down GFCF choc.chips. form the dough into any form you want. Dip into the melted choc.chips and place on wax paper to dry. You can decorate with anything you want ( GFCF of course ). ******************************************* hicken Nuggets I have a coating for chicken that tastes similar to the one used at Chick-f-let(sp?Sorry, it is early.) Anyway, it goes like this: 3 parts instant mashed potato flakes 1 part cornstarch 1 part garfava bean flour 1 part sorghum flour Salt and pepper Mix these in a bowl. Dip chicken piece in egg/Dari free mixture and then in dry ingredients and fry. I believe this is the best chicken recipe I have made so far. It is crispy and yet not hard like when using rice flour.
