Guest guest Posted May 16, 2001 Report Share Posted May 16, 2001 I have checked the archives and did not see a definite answer if anyone knew of a maple syrup that did not have whey in it. If there is one, can someone please post it. I cannot find any way to contact the people who make the maple syrup that I can buy locally. I planned on making my own syrup for candy sometimes (sugar and water boiled down) but I thought that always got hard which is why people use it for candy. We use turbinado sugar and that has some flavor to it, but if it gets hard then obviously we can't use it as syrup. Does anyone actually know how that works? I planned on putting vitamins and/or enzymes in the candy while it was cooling so I could hopefully get something into them that way. Does anyone know if it will hurt the vitamins or enzymes. I had called the company regarding processing using whey, and they informed me that they DO NOT use it. I called them a few months ago to check on their syrup that is marked parve and the woman I spoke with assured me that it contains no cassein due to the fact that many of the clients also are very allergic to milk products. If they do use whey, she said it was a drop per barrel and is immediately burned off (or something like that). So far I haven't had any problems with their products. You can reach them directly by calling or on the web at www.maplesource.com. They also make maple sugar candy, which I haven't tried, but was told is was ok to use. Hope this helps.
