Guest guest Posted May 15, 2001 Report Share Posted May 15, 2001 You got it! This is the biscuit kind, not the sponge cake type. Kirby is eating the shortcake plain for a bread, but maybe he's nuts? It comes out nicely golden and really pretty. And for those not using corn- I would think just use another starch, or more of the potato should work. Ingredients: 1/3 cup shortening 1/2 cup potato starch 3/4 cup cornstarch 1 3/4 t xanthum 1/2 t salt 1/4 c sugar 1 T baking powder 1/3 t baking soda 3/4 c milk 1 egg Preheat oven to 375.Blend all ingredients mixing to remove lumps. Dough will be quite soft, a bit sticky.Press into a lightly greased pie or cake pan. Bake for 15-20 min. or until lightly brown. Top with strawberries, peaches or raspberries. Clean and half about a quart of strawberries, or raspberries. Can use a potato masher or back of spoon to crush some of the berries (makes more of the juice). Top with 1 cup of sugar (more or less) and let sit 30 min.
