Guest guest Posted June 2, 2001 Report Share Posted June 2, 2001 * These are good and for those that can't have peanut butter (although I am sure peanut butter could be used) and if you need a cookie , but don't have any flour. you don't have any oil, ran out of vanilla, etc. Bake these- Mix together 2 cups of almond butter, 2 cups sugar and 2 eggs. Drop by the teaspoon onto cookie sheets and bake in a preheated 350 degree oven for 8 minutes. Put your thumbprint into each cookie as it is still warm and fill the indent with Welchs grape jelly or any acceptable jelly. My only attempt at making almond butter with my Vita Mix did not turn out so good. Next time I am going to try the grinder on my Kitchen Aide. These sound good.
