This was my question/answer about butter; since many of you-as well as me, at

this point-were wondering, I had to ask the company and see what they said. I

thought I'd share.

???? didn't come up!!! let me try again.

This is in reference to your request for information about the amount

of

casein in butter.

Regular butter, both salted and unsalted, contains approximately 0.8%

milk

protein. 80% of milk protein is casein and 20% is whey protein

(lactoglobulin and lactalbumin). Therefore, butter contains

approximately

0.64% casein (0.09 grams per serving [1 Tbs.]. or 0.72 grams per 1/4

lb.

stick).

Challenge Whipped Butter contains 0.05 grams of casein per serving (1

Tbs.).

If you were to clarify regular butter, you would essentially remove

all of

the milk protein and the casein content would be negligible.

Heavy cream contains approximately 2.2% milk protein, or 1.76% casein.

Sincerely yours,

D. Forsmo

Did you send the info as an attachment or something, because I didn't

get it; see message below.

Note the " non-text portions of this message have been removed " ; this came

with your email.
