Usually MUCH later. Then the parents saw huge differences. I think the problem is, milk clears the system very quickly but gluten takes months or years to clear, which makes it difficult to see the gradual progress with the elimination of gluten. Guest guest Posted June 26, 2001 Report Share Posted June 26, 2001 Theere's a whole bunch of different issues here. Classic allergies to wheat or other foods (IgE). Celiac disease in which gluten damages the villi - for starters. Food intolerances as opposed to allergies (IgG) Gluten opioids (the main theory behind the gfcf diet) And probably some others I can't remember at the moment. The best way to know is to strictly eliminate all sources of gluten and see what happens after awhile. Or have a peptides test run by a top of the line research lab.
