There have been some pretty convincing stories on the lists in the past,

about kids who didn't go fully gfcf at first, but did later. Usually MUCH

later. Then the parents saw huge differences. I think the problem is, milk

clears the system very quickly but gluten takes months or years to clear,

which makes it difficult to see the gradual progress with the elimination of

gluten.

Theere's a whole bunch of different issues here.

Classic allergies to wheat or other foods (IgE).

Celiac disease in which gluten damages the villi - for starters.

Food intolerances as opposed to allergies (IgG)

Gluten opioids (the main theory behind the gfcf diet)

And probably some others I can't remember at the moment.

The best way to know is to strictly eliminate all sources of gluten

and see what happens after awhile.

Or have a peptides test run by a top of the line research lab. (For

list, do a search of the archives for n's posts on this topic.)
