I won't laugh. Breads can be trying for ANYONE. EVEN gluten containing ones, but ESPECIALLY GFCF ones. So your answer is " Yes and no " . Yes to another electric beater (use the batter beater attachment though not the dough hook), esp. if the batter is very loose. The Kitchen Aid is just unique in its mixing pattern/ability and power with stiffer doughs like GFCF, and has less issues with doughs climbing the beaters, burning the motor, etc. Unless stated differently for the recipe, the more air that can be incorporated in the dough the better the chance for rise. No to hand beating MOST times for the above reasons. Some batters are so loose though you can get away with it like the Noah's recipe. Here's another question for you and anyone else (I know it's been asked before); can you convert the Noah's bread and other more 'batter' type recipes to bread maker? I know you would have to halve the recipe or something. I am so baking impaired - anything I could do in the breadmaker would be a Godsend.
