Of course you need to recognize that GFCF breads may need some tweaking. Or just look online for recipes already set up for this at www.yahoogroups under gfcfrecipes or food allergykitchen. In the next several weeks as www.allergy.kitchen.com is finished we will archive a lot of these recipes. A lot of GF breads fare better using smaller loaf sizes or English muffin tins. Since they lack the protein and structure for stability and the exact amount (not too much, not too little) moisture is so critical, they are more prone to not rising OR rising and falling.
