Do you mean tapioca flour or tapioca beads? As far as the flour, I

intermix flour in any and all recipes and never have a problem. My son

has a slight allergy to rice, so anytime a recipe calls for rice flour I

usually just sub in a tapioca/sorghum mix or a tapioca/potato mix. I

thicken homemade gravies with tapioca flour. Here are some recipes that

specifically ask for tapioca flour:

Noah's Bread

1/2 cup white rice flour

2/3 cup tapioca flour

1/3 cup potato or corn starch

1/2 tsp salt

2 tsp baking powder

2 tsp guar or xanthum gum

1 egg

1/3 cup oil (I've used olive, cannola, safflower, and vegetable)

1/2 cup cf milk (I use almond, rice or dairy free mix)

1/3 cup sparkling water (I've used perrier, club soda, various sparkling

waters)

Combine all dry ingredients, mix together.

combine beaten egg, oil and milk. Add slowly to dry mix. Beat well.

Add sparkling water very gradually. Beat well.

Drop from tsp. into hot oil or form into donuts.

If you're making hamburger buns or rolls, put batter into a plastic bag,

cut

small hole in corner, and " pipe " onto cookie sheet or hamburger bun pan.

Noah's bread to make great pizza crust, bagels, big soft pretzels,

cinnamon rolls and more. get 12 hamburger buns out of a double batch

PA Dutch Molasses Cupcakes

1 1/2 c GF Flour Mix (see below)

1/4 c sugar

1/2 tsp xantham gum

pinch salt

3 T solid shortening

Combine dry ingredients in large bowl and mix thoroughly. Add shortening

and work into a fine crumb mixture suing hands or pastry fork. Reserve

scant handful ( ~ 1/4 c).

1/2 c unsulphured molasses

1/2 t baking soda

1/2 c boiling water

In medium bowl, combine molasses and baking soda. Beat with wooden spoon

until light and taffy colored. Add boiling water to molasses - this will

foam up. Mix well. Add to dry ingredients and mix well. This will be a

little lumpy depending on how finely the crumbs were worked.

Divide evenly among 12 paper lined cupcakes. Top with a sprinkling of

crumbs. Bake in a preheated 320F oven for 20 minutes or until tests

done.

Modified Featherlight Rice Mix

3 c white rice flour

3 c tapioca starch

2 c arrowroot starch

1 c potato starch

3 T potato flour

Sift ingredients together in large airtight container. Shake or stir

well before each use.

pancake recipe 2 cups sorghum flour

2/3 cup potato starch

1/3 cup tapioca flour

3 tablespoons sugar

2 teaspoons xanthan gum

1 tablespoon baking powder

touch of salt

Mix above well and set aside. In separate bowl mix:

2 cups water

1 cup milk sub

3 eggs

3 tablespoons oil

1/2 teaspoon vanilla

Combine with dry ingredients and cook on griddle until done.
