If your milk and cheese comes from a cow it has casein in it and casein is not the only thing in milk that can be an issue in our kids. The best shot at results on this diet is rotation of whole foods, little or no packages, no artificials and an eye toward keeping starches and sugars on the low end. It stinks at first but early on you will know if it is for you and your child. Soy is not a great substitute, filled with estrogen and other nonsense not great for our kids. Rice milk is constipating and has no nutritional value per our GI. The diet, if done right and if you replace all necessary vitamins and minerals, can help you spot other problematic foods. Currently the FDA allows the packaged food that claims to be GFCF to have up to 2% of the offending items in it. That is due to change in either 2009, or 2011 but I doubt the labeling will be much easier to figure out as there willlikely still be euphemisms for what we are avoiding or trying to. Special Diets for Special Kids and GFCF for Dummies may help you. I would encourage you to try a diet. The reason is simple: it is a good way to find allergens that are not easily found by the tests and it may help you prevent your child from growing into a harsher diagnosis if nothing else. We used to be boxed food central but my mother in law moved in with us and she does the cooking. Most of the stuff we cook, is semi-homemade now. Does going GFCF mean making everything from scratch and never buying prepackaged stuff. Are there prepackaged stuff that is safe and a sorta middle line between all prepackaged and no prepackaged that we could do? This is why I am researching it so I can find a good balance. Guest guest Posted January 8, 2008 Report Share Posted January 8, 2008 I can only tell you our experience: We have found the GFCF flours from bobs red mill to be the base for a lot of stuff. In the beginning I looked up food sources for every vitamin and mineral and snick those things in pancakes and meatloaf. Those two items were our staples. We have a fluoride issue so we changed cookware and while we used some packaged stuff, potato chips, gfcf pretzels, mostly don't except special occasions. Chips are not great for healing guts and the soy in those delicious gfcf sans gluten pretzels did not work well for us. Chocolate seemed to be an issue but we still have it from time to time. GFCF mixes have aluminum in them (some). We use the Whole foods white cake mix in a pinch and cook on medium heat on stove and not above 270 degrees in the oven with coconut oil which has been good to us. It is something to consider. It will help you rule in or out allergy and metal (along with tests) and can be helpful with genetic stuff. Whether you do the diet or not I sure hope you find good answers and interventions for your child. We're gunna do a 1-2 week trial over spring break and see if it helps. We picked spring break because 1) it'll be after my surgery so I can be involved and 2) Trysten won't be in school so we can completely control his food.
