Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 * Someone asked for a recipe just a couple days or so ago for gnocchi and I finally found it in my recipe folder. It was posted back in March by Weaver. I haven't tried it yet but sounds delicious and definetly am going to try it. on Long Island New York * peel, quarter and boil 2 - 3 medium red potatoes. Mash and set aside. in pan heat to boil 1/2 cup darifree and 5 Tblsp of spectrum shortening (you can sub butter of choice). Add 1 cup of potato flour and 1/4 tsp guar gum and quickly stir( don't cook) til crumbly. Take off heat and toss into kitchen aid. Add 2 eggs, 1/2 tsp paprika, 1 tsp salt, 1/2 tsp garlic powder and any other spice you like. Mix. Add potatoes. Mix. Bring big pot of water to a boil with pinch of salt. Roll dough in your hands into logs and pinch off pieces about 1/2' long and drop in water. Boil for 4 - 5 minutes. It will take 3 batches to cook all gnocchi, so use a slotted spoon to take them out and keep the water boiling. Transfer to a lightly greased pyrex pan and into a hot 350 oven for 10 minutes.
