Other than I should have given it a little extra time to bake, my idea for cinnamon bread was well received this morning. I made my usual bread dough in the bread maker. (I think I'll bake in the oven next time so I can better regulate the bake time) When the bread maker got to the rise function, I opened the lid and scooped out some dough. I then put a layer of cinnamon mixed with brown sugar on the dough and scooped back the dough I took out. I did a little moving around and running a knife through the dough and let it rise. It smelled wonderful while baking. This morning the boys ate 3/4 of the loaf. My non gfcf nephew even asked for a piece and loved it. (he and I had gluten bagels) I think I might make the layer a little thicker next time and make the bread in tuna cans or mini loafs pans. It will be easier to get an appropriate bake time. The bread maker would not let me reset the time to bake 5 minutes more. Sigh!
