I know cake flour > is very light-so I tried extra fine rice flour mixed with tapioca, > corn and potato starches How about using white cornmeal instead of regular cornmeal/flour? And cornstarch or arrowroot or sweet rice flours? they're all white, right? But I wouldn't know how to tell you to make the proportions for it; that you'll have to guess it. The Bette Hagman's mixes for cakes are all yellowish? I have yet to make a cake. The only one I made was a chocolate flourless cake for Easter, but was VERY RICH and is not a big cake eater anyway, even though he loves any sweets or chocolate. Good luck, Cristina-WA
