In your case, I would just remain happily gluten free. The only reason to

insist on having gluten in the food you eat, is because that's a way of

supporting the grain farmers. Gluten and casein are cheap sources of moderately

safe protein, but nothing more than that.

I've written several mails during the last two months on how to conduct

challenge experiments, and suggest that you try to look these up in the

archives...
