You can also use this for pancakes. RICE POLISH MUFFINS OR PANCAKES Preheat oven to 350degrees. In a large mixing bowl, combine: 1 cup rice flour (I've made these with both brown rice flour and white rice flour and they are good either way) 1/2 cup rice polish (I use Ener-G brand from the hfs) 1/4 cup Nutri-flax ground flaxseed powder 1/3 cup sugar 1 Tbsp GF baking powder 1/2 tsp salt In a smaller bowl, combine: 1 cup DariFree or other liquid (I put the powder with the above ingredients and just add water here) 1 egg or (2 egg whites) or (1egg white + 1 tsp egg substitute + 1 Tbsp water) 2 Tbsp oil 2 Tbsp molasses 1 tsp vanilla 1/4 cup raisins or other dried fruit (optional) Add liquids to dry mixture. Combine only until mixed; do not overbeat. Spoon into well-greased nonstick muffin tin and bake for 20 minutes or until done. Remove promptly from tin and cool before serving.
